Recipe:

- 45ml madeira

- 30ml pineapple liqueur

- 15ml cognac

- 15ml fresh lemon juice

- pinch of cardamom (or cardamom bitters)

Shake everything on ice until sufficiently chilled, strain into a prechilled julep mug or glass of your choice over crushed ice, garnish with mint, a dried pineapple wheel (or pineapple chunks) and grounded cardamom.

A very nice riff on the Sherry Cobbler. Very surprising how easily 30ml of pineapple liqueur disappears in terms of flavor and the sweetness remains relatively subtle. Just as the pineapple generally plays second fiddle to the very nice dried fruits, grapes and light nuts of the Madeira + Cognac duo.

In addition, an ingenious nose of mint and cardamom, I can only recommend to really grind some fresh cardamom as a decoration, plus some pineapple... Very nice and relaxing! With a slightly more intense cognac, it also has a little more character.
