Call It A Night
Recipe:
- 60ml bourbon (originally Woodford Reserve)
- 22.5ml rich, sweet vermouth (originally Carpano Antica)
- 15ml P.X. sherry
- 1 tsp Averna amaro
- absinthe (for rinse/aromatizer)
Stir first 4 ingredients over ice until sufficiently chilled, strain into a prechilled cocktail glass aromatized/rinsed with absinthe. Garnish with an orange zest.
When I open a bottle with a limited shelf life, such as wine aperitifs or ports and sherries, I usually go through entire sessions over 3-4 weeks with recipes containing just that ingredient. This one comes from a series with P.X. Sherry and out of a total of almost 15 drinks, it was in my top 3 and possibly even in my top 5 Manhattan-like drinks ever!
Incredibly complex, dried cherries, nuts, toasted oak, extremely elegant, subtle freshness (thanks to only 2-3 delicate absinthe sprays with the aromatizer), Mediterranean herbs, dried raisins, cola nut, it doesn't stop, I could list 5-10 more things.
Perhaps a tad on the sweeter side of Manhattan twists, which is immediately apparent from the recipe. The P.X. and the hint of amaro make it sweeter, but at the same time well-balanced by the absinthe and the bitter notes in the amaro, a great drink.
